Nubby Yarn
Using 2 strands with a twist, you can create "nubby" yarn.

This one didn't turn out too well, but I'm including it to give you an idea. Maybe you can play with it and have better results than I did.

The idea is to use 2 strands of yarn--one thin--one thick and fuzzy. Twist them together they way they naturally want to go, only much tighter. Pull one strand out and up toward your needles, to create a lump of yarn, then knit both strands as usual. You can swap out between the fine yarn and the thick yarn to create more interest.

Mine was more trouble than it was worth. In this photo, the bottom third used the nubby effect, the middle third was straight knitting, and the top third uses seed stitch (knit 1, purl 1) to create texture. I couldn't tell enough difference to make up for the extra labor.
